It's advisable that you do not peel your carrots before eating as most of the antioxidant it contains can be found in the outer layer. Wash thoroughly instead. However, if you are not eating them immediately, peel them to increase the shelf life.

You can either boil or freeze your carrots but keep in mind that freezing ensures you maintain most of the nutrients.
